1 Basic Buttermilk Pancakes recipe
16 ounces white chocolate chips
8 jumbo marshmallows
green food coloring
yellow icing for writing
1. To make the top of each hat: Add the white chocolate chips to a microwave-safe bowl and heat for 15 seconds at a time, stirring between each interval, until the candy is smooth and lump-free. Add several drops of green food coloring to the melted candy and stir thoroughly. (Add more until desired color is achieved.) Dip each marshmallow into the green liquid chocolate and cover completely. Use a fork to pick it up (so that you don’t smudge the green covering), and then hit your fork on the side of the bowl to get the excess candy off of the marshmallow, giving it a smooth finish. Place the marshmallow on wax paper, and let the candy coating set.
2. To make the bottom of each hat: While you are waiting for the candy coating to set, whip up a batch of the Basic Buttermilk Pancakes. Add several drops of green food coloring to the mix and stir thoroughly. (Add more until desired color is achieved. Make sure it matches the green on the marshmallows.) Once your skillet or griddle is hot, pour about 3 tablespoons of batter into the hot pan. Once the batter is bubbly, flip it over. Don’t cook them too long, as the green color fades the longer they are cooked.
3. To make the buckle: By this time, the candy coating should be hard. Using a tube of yellow icing, draw a yellow box on each marshmallow for the buckle.
4. Place your pancake on a plate, and simply place the candy-covered marshmallow on top of the pancake, buckle side down.
