1 (16 ounce) can of refried beans
1 (1 ounce) package of taco seasoning
1 cup of guacamole or you can make homemade guacamole
1 (8 ounce) container of sour cream
1 cup of chunky salsa or a cup of pico de gallo; or you can make homemade pico de gallo (Mmmm!)
1 cup of well-shredded cheddar or Mexican blend type cheese
2 Roma tomatoes, diced medium-ish
1/2 bunch of green onions, sliced
1 (2.25 ounce) can of sliced olives, drained thoroughly
8 (9 ounce) plastic tumblers
Copious amounts of tortilla chips
In a small bowl, first mix taco seasoning with the refried beans. Some folks prefer to mix the taco seasoning in with a sour cream layer but if you want to keep it as a bright white layer, stick with the beans. It’ll work better this way! I promise!
For the beans:
Layer one: Beans + taco seasoning
Layer two: Sour cream
Layer three: Quacamole
Layer four: That tasty Salsa or pico de gallo
Layer five: The Cheese!
Layer six: Tomatoes
Layer 7-O!: Green onions and the olives
Now, in each of the little plastic glasses, layer two Tablespoons (approx.) of beans, which should be immediately followed by two Tablespoons of the sour cream, then two Tablespoons of the guacamole, two Tablespoons of the salsa or homemade pico de gallo, and lastly two Tablespoons of the cheese. Make sure to drain the salsa or pico really, REALLY well, and get ALL the excess liquid out of these before you include them. Then top them with about one or two teaspoons of the diced tomatoes, olives, and the green onion.
